Ingredients
  

  • 600 g skinless salmon fillet cut into 3cm cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon fine sea salt
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce or tamari for gluten-free
  • Fresh parsley chopped, for garnish

Method
 

  1. Prepare the salmon: Cut the salmon fillet into uniform 3cm cubes. Pat them dry with kitchen paper – you want the surface to feel dry to the touch, not slick.
  2. Make the marinade: In a mixing bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, lemon juice, honey, and soy sauce. The mixture should look glossy and smell fragrantly of warm spices.
  3. Marinate the bites: Add the salmon cubes to the bowl and gently toss until every piece is evenly coated. The salmon should glisten with a golden-orange hue from the paprika.
  4. Preheat the air fryer: Set your air fryer to 200°C and let it preheat for 3 minutes. You will hear the fan kick in, and the basket will feel hot when you open it.
  5. Arrange the salmon: Place the salmon bites in a single layer in the air fryer basket. Leave a small gap between each piece – about 1cm – so the hot air can circulate. You may need to cook in two batches.
  6. Cook the first side: Air fry at 200°C for 4 minutes. When you open the basket, the tops of the bites should look lightly golden and the edges will be starting to crisp.
  7. Shake and finish: Shake the basket gently to turn the bites, then cook for another 3-4 minutes. The salmon should feel firm to the touch and flake easily when pressed with a fork. The aroma will be rich and slightly smoky.
  8. Rest and serve: Remove the salmon bites from the basket and let them rest on a plate for 2 minutes. Garnish with fresh parsley and serve immediately while the exterior is still crisp.

Notes

For gluten-free, use tamari instead of soy sauce. Cook in batches if needed to avoid overcrowding the air fryer basket.
